I'd highly recommend a hike from the Jo Hays Vista near Pine Grove Mills (PA 26) to Penn Roosevelt State Park via the Jackson and Mid State Trail...with maybe a side trip to Shingletown Gap or Bear Meadows.
This would cover a wide array of scenery, including David's Vista, The Roman Tower, Mount Nittany Vista, Turkey Vulture Vista, Little Flat, the Indian Wells Vista, Bear Meadows, Detweiler Run, an old rail bed, the Thickhead Natural Area and good signage the whole way.
The terrain is rocky, as is typical, and there's a fair amount of climbing on day two, but there are plenty of dry camp sites, and plenty of water on the second day if you bring a filter or other purification method.
I have some online descriptions, or you can see this on the Mid State Trail guide. If I could only take one overnighter within 100 miles of here, this would be the one.
I recommend camping at Penn Roosevelt State Park on the second day.
